Transform tart, underripe avocados into a tantalizingly tangy treat with this simple pickling recipe. Infused with a spicy dill brine, these pickles are a delightful addition to burgers, salads, or enjoyed straight from the jar!

Step

In a saucepan, combine vinegar and water. Stir in sugar and salt; add mustard seeds, dill, peppercorns, and habanero pepper flakes. Bring to a boil over medium-high heat, stirring until sugar and salt are completely dissolved. (Approximately 5 minutes)

Remove from heat and allow the brine to cool to room temperature. (Approximately 15 minutes)

Divide the habanero peppers and garlic clove evenly between 2 clean canning jars.

Divide the avocado slices evenly between the two jars, arranging them artfully.

Stir the cooled vinegar mixture to ensure the seasoning is evenly distributed, then carefully pour the brine into the jars, completely covering the avocado slices.

Seal the jars with lids and place them in the refrigerator to chill. Allow the flavors to meld and develop for at least 24 hours before enjoying.

For a milder flavor, reduce the amount of habanero pepper flakes or omit them altogether.
The brine can be reused! Simply add more underripe avocado slices to the cooled brine and allow them to pickle for another 24 hours.
These pickles will keep in the refrigerator for up to 5 days.
Use high-quality distilled white vinegar for the best flavor.
Experiment with other spices and herbs such as coriander seeds, bay leaves, or red pepper flakes to customize the flavor profile.
