Prep the Dough (5 minutes): On a lightly floured surface, roll out each circle of pie dough to 1/8-inch thickness. Use a 3 1/2-inch round cookie cutter (or a wide-mouth jar) to cut out 16 circles, 8 from each dough round.

Fill and Seal (10 minutes): Moisten the edge of a dough circle with water. Spoon 2 tablespoons of blueberry pie filling into the center, leaving a border. Top with another dough circle and pinch the edges to seal. Crimp the edges with a fork for extra security. Cut a small slit in the top of each pie to vent steam. Repeat until you have 8 hand pies.

Air Fry (9 minutes per batch): Preheat your air fryer to 350 degrees F (175 degrees C). Spray the air fryer basket with cooking spray. Place the hand pies in the basket in a single layer, ensuring they aren't overcrowded (work in batches if needed).

Finish and Bake (2 minutes): Spray the tops of the pies with butter-flavored cooking spray and sprinkle with coarse sugar.

Cook until golden brown, about 9 minutes. Let cool slightly before serving.

For an extra touch, brush the tops of the pies with an egg wash before sprinkling with sugar – this will give them a beautiful sheen.
Feel free to experiment with different pie fillings! Apple, cherry, or even chocolate would be delicious.
Keep a close eye on the hand pies during cooking, as air fryers can vary in temperature. Adjust cooking time as needed to prevent burning.
These hand pies are best enjoyed warm, but can also be stored in an airtight container at room temperature for up to 2 days.
