Bring a large pot of water to a rolling boil, then remove from heat. (Prep time: 8 minutes)

Wash and thoroughly dry the chestnuts. Place each chestnut flat-side down on a cutting board. With a sharp paring knife, carefully score a large 'X' on the rounded side of each chestnut, ensuring the knife penetrates through the outer skin and the brown layer beneath. This crucial step will facilitate easy peeling after roasting. (Prep time: 15 minutes)

Submerge the scored chestnuts in the hot water for 1 to 5 minutes, depending on their size. Remove the chestnuts with a slotted spoon and immediately transfer them to the air fryer basket. Add 1 cup of the boiled water to the bottom of the basket to create steam. (Prep time: 2 minutes)

Cook in the preheated air fryer for 10 minutes. Then, shake the basket well to ensure even cooking. Check to see if there is still water in the basket. If the water has evaporated, add another 1/2 cup. Continue cooking until the shells have begun to peel away and the exposed flesh has browned, approximately 5 to 10 minutes. (Cook time: 15-20 minutes)

Allow the roasted chestnuts to cool slightly until you can comfortably handle them. Peel away the shells and enjoy the warm, tender chestnuts immediately.

For optimal results, select chestnuts that are firm and heavy for their size, avoiding any with soft spots or mold.
The soaking step is crucial for preventing the chestnuts from drying out during air frying and also makes peeling easier.
Be cautious when scoring the chestnuts, as the shells can be quite hard. Use a sharp knife and apply steady pressure.
If you prefer a slightly sweeter flavor, you can toss the roasted chestnuts with a drizzle of maple syrup or honey after peeling.
