Spray the basket of the air fryer with nonstick cooking spray. Place breaded veal cutlets into the basket in a single layer, being careful not to overcrowd. Spray the tops of the cutlets with nonstick cooking spray. (3 minutes)

Cook for 5 minutes. Flip the cutlets, spray any dry spots with nonstick cooking spray, and cook for 5 minutes longer, or until golden brown and cooked through. (10 minutes)

Repeat with remaining veal, if necessary. Serve immediately with lemon wedges. (5 minutes)

For best results, use high-quality veal scallopini. Pound the cutlets to an even thickness for uniform cooking.
Ensure the air fryer basket is not overcrowded. Cook in batches if necessary to maintain crispiness.
Serve immediately for the crispiest texture. A squeeze of fresh lemon juice brightens the flavor beautifully.
For an extra touch, try adding a pinch of grated Parmesan cheese to the panko bread crumbs.
