For a richer flavor, toast the hazelnuts lightly before grinding. If the dough is too soft to handle, chill it for an additional 30 minutes. Don't skip the vanilla bean in the sugar! It makes a huge difference in the flavor. Almonds can be substituted for hazelnuts.
