In a large saucepan, combine the brown sugar, butter, gold rum, molasses, spicy mustard, and cider vinegar.

Place the saucepan over medium heat and bring the mixture to a gentle boil. (Approximately 2 minutes)

Once boiling, reduce the heat to low and simmer, stirring constantly, until the sugar has completely melted and the glaze has thickened to your desired consistency. (Approximately 6-8 minutes)

Season the glaze to taste with salt and freshly ground black pepper. Adjust sweetness or spice levels as desired.

For a deeper flavor, consider using a dark brown sugar. Avoid burning the butter by reducing the heat when required.
The glaze can be made ahead of time and stored in an airtight container in the refrigerator for up to a week. Gently reheat before using.
Experiment with different types of rum or mustard to customize the flavor profile. Bourbon, scotch or rye can be subtituted to the Rum, or Dijon mustard, or whole grain mustard can be subtituted to the spicy mustard.
