Follow The Directions

01

Step
5 mins

Preheat the oven to 375 degrees F (190 degrees C). Generously spray a baking sheet with cooking spray. (5 minutes)

02

Step
5 mins

In a small saucepan over medium heat, combine the apricot preserves, Sriracha, Worcestershire sauce, and butter. Stir constantly until the butter is melted and the mixture is well combined. (5 minutes)

03

Step
10 mins

Thoroughly clean the Cornish hens and pat them dry with paper towels. Coat the outside and inside of each hen with grapeseed oil. Season generously with mango-habanero seasoning. Stuff 2 sprigs of fresh basil inside each hen. (10 minutes)

04

Step
2 mins

Place the seasoned hens on the prepared baking sheet and cover them loosely with aluminum foil.

05

Step
1 hrs

Roast in the preheated oven for 45 minutes. Remove the foil and baste the hens generously with the apricot glaze. Return the hens to the oven and continue roasting until the internal temperature reaches 165 degrees F (74 degrees C), about 15 minutes more. Use an instant-read thermometer inserted into the thickest part of the thigh, near the bone, to check for doneness.

For an even deeper flavor, marinate the hens in the grapeseed oil and mango-habanero seasoning for at least 30 minutes before roasting.
If you don't have mango-habanero seasoning, a blend of paprika, chili powder, and a pinch of cayenne pepper works well as a substitute.
Be sure to monitor the hens closely during the final 15 minutes of cooking to prevent the glaze from burning. If necessary, reduce the oven temperature slightly or cover the hens loosely with foil.
