In a small bowl, whisk together the olive oil, red wine vinegar, and minced garlic. Allow the flavors to meld while you prepare the cucumber (approximately 5 minutes).

Peel the cucumber, halve lengthwise, and scrape out the seeds. Grate the cucumber using a cheese grater. Place the grated cucumber in a sieve set over a bowl. Sprinkle generously with sea salt. This will help draw out the excess moisture.

Allow the cucumber to drain for at least 15 minutes, pressing down occasionally to extract as much liquid as possible. Alternatively, wrap the grated cucumber in a clean tea towel and wring out the excess moisture.

In a medium bowl, combine the drained cucumber and the full-fat Greek yogurt. Stir in the olive oil and garlic mixture.

Mix until well combined. Season to taste with sea salt. For the best flavor, cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

For a smoother tzatziki, use a microplane to grate the garlic into a paste.
Do not use low-fat Greek yogurt, as the dip will lack richness and flavor.
If you like a bit of freshness, add a tablespoon of fresh minced dill or mint.
Make sure to strain the cucumber very well. This is the key to a thick, creamy tzatziki.
Tzatziki can be stored in an airtight container in the refrigerator for up to 3 days.
