For a richer flavor, consider browning the ground beef with a tablespoon of tomato paste.
Feel free to substitute other vegetables based on your preference or what you have on hand. Celery, zucchini, or green beans would all be excellent additions.
If you prefer a thicker soup, you can mash some of the potatoes against the side of the pot or add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 15 minutes of cooking.
