Step

Place the soaked black-eyed peas in a saucepan and cover with water by one inch. Bring to a gentle boil, then reduce heat to low and simmer until the peas are tender but still hold their shape (approximately 35 minutes). Drain and set aside to cool.

In a large bowl, combine the cooled black-eyed peas, chopped celery, shredded carrots, fresh parsley, white onion, and mint. Toss gently to ensure even distribution of ingredients.

For the dressing, whisk together the olive oil, freshly squeezed orange and lemon juice, pressed garlic, ground coriander, salt, black pepper, and brown sugar in a small bowl. Alternatively, blend for 6 seconds for a smoother consistency. Transfer the dressing to a small saucepan and simmer over low heat for 5 minutes to allow the flavors to meld. Remove from heat and let it cool slightly. Pour the dressing over the bean salad, ensuring all ingredients are well coated. Refrigerate for at least 1 hour before serving to allow the flavors to fully develop.

For an extra layer of flavor, try adding a pinch of red pepper flakes to the dressing for a subtle kick.
If you're short on time, canned black-eyed peas can be used, but be sure to rinse them thoroughly before adding them to the salad.
This salad is best served chilled, but can also be enjoyed at room temperature. It's a perfect make-ahead dish for potlucks and gatherings.
