Spoon 1/4 cup portions of the potato mixture into the hot skillet, leaving space between each pancake. Gently press down on each pancake with a spatula to flatten them slightly into even circles. (2 minutes)

Cook the pancakes, covered, until the bottoms are golden brown and crispy, about 3 to 5 minutes. Covering the skillet helps to cook the pancakes through evenly.

Carefully flip the pancakes and continue cooking, uncovered, until the second side is golden brown and crispy, about 3 to 4 minutes more. (4 minutes)

Remove the cooked pancakes from the skillet and place them on a wire rack or paper towel-lined plate to drain any excess oil. (1 minute)

For extra flavor, consider adding a pinch of garlic powder or onion powder to the potato mixture.
If the potato mixture seems too wet, add a tablespoon of pancake mix at a time until it reaches a workable consistency.
