Remove from oven and let cool slightly for 5 minutes. Squeeze the juice from the roasted lemon halves into the dish, being careful to avoid any seeds. Squeeze the roasted garlic head to release the softened cloves into the sauce.

Add the cooked pasta to the baking dish and stir to coat evenly with the sauce. (2 minutes)

For an even richer flavor, use a high-quality extra virgin olive oil.
Feel free to add other vegetables to the baking dish, such as cherry tomatoes, bell peppers, or zucchini.
If you don't have shallots, you can substitute with a small yellow onion.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or oven.
