Combine chicken, breadcrumbs, salt, paprika, black pepper, cayenne pepper, garlic powder, and 1 tablespoon vegetable oil in a food processor. Pulse until the mixture is finely ground, but not a smooth puree. (5 minutes)

Scoop 2-tablespoon portions of the chicken mixture onto a sheet pan, forming about 24 nuggets. Cover and chill for 30 minutes. (30 minutes)

In a bag, combine self-rising flour (or all-purpose flour and baking soda) and cornstarch. (2 minutes)

Using slightly damp hands, shape each portion into a ball or nugget shape. Add 5-6 nuggets at a time to the flour mixture in the bag, toss to coat, and shake off excess. Place back on the sheet pan. (15 minutes)

Chill the coated nuggets in the refrigerator for at least 1-2 hours, or up to overnight. (1-2 hours)

While the nuggets are chilling, prepare the bang bang sauce. In a bowl, whisk together mayonnaise, honey, Sriracha, soy sauce, sesame oil, rice vinegar, and Sichuan pepper (if using). Cover and refrigerate until ready to serve. (5 minutes)

Heat vegetable oil in a deep-fryer or large saucepan to 350°F (175°C). Carefully add the nuggets and deep-fry until golden brown and cooked through, about 4 minutes. Ensure an internal temperature of 165°F (74°C). Alternatively, shallow fry in a skillet over medium-high heat for 2-3 minutes per side. (10 minutes)

Transfer the cooked nuggets to a mixing bowl. Add half of the sliced green onions and pour in about 1/2 cup of the bang bang sauce. Toss to coat. (3 minutes)

Transfer the bang bang chicken nuggets to a serving platter. Top with more Sriracha and the remaining green onions. Serve immediately. (2 minutes)

For extra crispy nuggets, double-dip them in the flour mixture before frying.
Adjust the amount of Sriracha in the sauce to suit your spice preference.
These nuggets are best served immediately while hot and crispy.
The bang bang sauce can be made ahead of time and stored in the refrigerator for up to 3 days.
