Purée until mostly smooth, maintaining a slightly rustic texture with small lumps. Incorporate the butter pieces and continue to purée until fully integrated, resulting in a luscious and creamy purée. (10 minutes)

For a smoother texture, peel the beets after baking while they are still warm.
Experiment with different citrus fruits like lemon or grapefruit for a unique twist.
A pinch of red pepper flakes can add a subtle heat to complement the sweetness of the beets.
