Follow The Directions

01

Step
4 mins

In a large bowl, beat the softened butter with an electric mixer until light and fluffy, about 3-4 minutes.

02

Step
2 mins

Add the egg yolks one at a time, mixing well after each addition until fully incorporated, about 1-2 minutes.

03

Step
2 mins

In a separate bowl, whisk together the flour, granulated sugar, baking powder, cardamom, and salt until evenly combined.

04

Step
3 mins

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix. The dough should be crumbly, about 2-3 minutes.

05

Step
3 hrs

Divide the dough in half. Wrap each half tightly in plastic wrap and flatten into discs. Freeze for a minimum of 3 hours, or preferably overnight. (3 hours minimum)

06

Step
0 mins

Preheat oven to 350°F (175°C).

07

Step
5 mins

Remove one disc of frozen dough from the freezer. Using a coarse grater, evenly grate the dough into the bottom of a 9x13-inch baking pan. Gently press the grated dough to form an even crust.

08

Step
5 mins

Spread the blackberry jam evenly over the grated shortbread crust, leaving a 1/2-inch border around the edges.

09

Step
35 mins

Remove the second disc of frozen dough from the freezer and grate it evenly over the jam layer.

10

Step
1 hrs

Bake in the preheated oven for 30 to 40 minutes, or until the shortbread is golden brown and the jam is bubbly.

11

Step
5 mins

Let the shortbread cool completely in the pan before cutting into bars.

12

Step

Dust generously with confectioners' sugar before serving.

For a richer flavor, use brown butter in the shortbread crust. Brown the butter in a saucepan over medium heat until it turns a nutty brown color. Let it cool slightly before using.
Feel free to experiment with different flavors of jam. Raspberry, apricot, or even fig jam would be delicious alternatives.
If you don't have cardamom on hand, you can substitute it with 1/2 teaspoon of ground cinnamon or nutmeg.
For easier grating, make sure the dough is thoroughly frozen. If it starts to soften, return it to the freezer for a few minutes.
Store leftover shortbread bars in an airtight container at room temperature for up to 3 days.
