Soak the Peas: Place black-eyed peas in a large container and cover with several inches of cool water. Allow to soak for at least 8 hours, or preferably overnight. This step helps to soften the peas and reduce cooking time.

Prepare the Ham: Drain the soaked peas. Dice the ham steak, reserving the bone for added flavor during cooking.

Cook the Bacon: In a large skillet, cook the bacon over medium-high heat until crispy, about 10 minutes. Remove the bacon and drain on paper towels. Once cooled, crumble the bacon and set aside for garnish.

Sauté the Vegetables: Sauté the diced onion and celery in the bacon drippings over medium heat until softened and translucent, approximately 5 minutes. Add the finely chopped garlic and cook until fragrant, about 1 minute. Remove the bacon fat and transfer the vegetables to a soup pot or Dutch oven.

Combine and Simmer: Add the drained black-eyed peas, diced ham, ham bone, diced tomatoes (undrained), lemon juice, bay leaves, Creole seasoning, cayenne pepper, salt, and pepper to the pot with the vegetables. Pour in enough chicken broth to cover all the ingredients. Bring the mixture to a boil.

Slow Simmer for Flavor: Reduce the heat to low, cover the pot, and simmer gently until the peas are tender and creamy, about 2 hours. Remember to stir occasionally to prevent sticking.

Final Touches and Serve: Once the peas are cooked, remove the bay leaves and ham bone. Serve the black-eyed peas over warm cooked rice, garnished with the crumbled bacon and chopped green onions.

For a richer flavor, consider using smoked ham hock instead of a ham steak.
Adjust the amount of cayenne pepper to your desired level of spiciness.
If you don't have Creole seasoning, you can substitute with a blend of paprika, cayenne pepper, garlic powder, onion powder, and oregano.
For a vegetarian option, omit the ham and bacon and use vegetable broth. You can add smoked paprika for a smoky flavor.
This dish tastes even better the next day, as the flavors have more time to meld together.
