Line a rimmed baking sheet with parchment paper for easy cleanup and to prevent sticking. Place cherry tomatoes on the prepared baking sheet.

Distribute sage and thyme amongst tomatoes, reserving about 1 tablespoon of each for garnishing. Drizzle generously with olive oil. Sprinkle generously with sea salt and freshly cracked black pepper.

Roast until tomatoes are softened and blistered, with skins beginning to burst, approximately 25-30 minutes.

Remove tomatoes from the oven and gently transfer them to a serving bowl, being sure to include all the flavorful juices collected on the baking sheet. Garnish with the reserved fresh thyme, sage, and oregano. Season with additional sea salt and pepper to taste, if needed. Serve immediately.

For an extra layer of flavor, consider adding a pinch of red pepper flakes before roasting.
Balsamic glaze can be drizzled over the blistered tomatoes just before serving for a touch of sweetness and acidity.
Feel free to experiment with other herbs like rosemary, basil, or marjoram based on your preference.
These blistered tomatoes are also delicious served at room temperature.
