Follow The Directions

01

Step
12 mins

In a large pot, bring lightly salted water to a rolling boil. Add the farfalle pasta and cook according to package directions, until al dente (about 12 minutes). Reserve about 1/2 cup of the pasta water before draining. Drain the pasta and set aside.

02

Step
4 mins

While the pasta is cooking, prepare the broccoli. You can steam it, roast it, or microwave it. For microwaving: place broccoli florets in a microwave-safe bowl with 1/4 cup water. Cover and microwave on high for 3-4 minutes, or until bright green and tender-crisp. Season lightly with salt and set aside to keep warm.

03

Step
4 mins

In a medium skillet or saucepan, melt the butter over low heat (2 minutes). Stir in the heavy cream and gently simmer for 3-4 minutes, stirring occasionally, until slightly thickened.

04

Step
2 mins

Remove the skillet from the heat and gradually stir in the grated Parmesan cheese and minced garlic, stirring continuously until the cheese is fully melted and the sauce is smooth. Stir in the nutmeg. If the sauce is too thick, add a tablespoon or two of the reserved pasta water until it reaches your desired consistency. Season to taste with salt and pepper.

05

Step
0 mins

Add the cooked pasta and broccoli to the Alfredo sauce. Toss gently to coat evenly. Serve immediately, garnished with fresh parsley sprigs, if desired.

For a richer flavor, consider using a combination of Parmesan and Pecorino Romano cheese.
To prevent the Alfredo sauce from becoming grainy, make sure not to boil it after adding the cheese.
Add grilled chicken, shrimp, or toasted pine nuts for extra protein and texture.
A squeeze of fresh lemon juice brightens the dish beautifully. Stir in just before serving.
For a spicier version, add a pinch of red pepper flakes to the sauce.
