For a richer flavor, use full-fat coconut milk.
Toast the shredded coconut in a dry pan over medium heat, stirring frequently, until golden brown and fragrant. Watch carefully to prevent burning.
Jasmine rice can be substituted with basmati rice for a slightly different flavor profile.
Adjust the amount of sugar to your preference. Some may prefer a less sweet rice.
If you don't have fresh lime zest, a few drops of lime juice can be used as a substitute.
