Follow The Directions

01

Step

Preheat the oven to 400 degrees F (200 degrees C). Spray a casserole dish with cooking spray. (2 minutes)

02

Step

Place cherry tomatoes, diced onion, and minced garlic in the prepared dish. Drizzle olive oil over top, season generously with salt and pepper, and toss to coat. Nestle the block of feta cheese in the center of the dish, turning it gently to coat it with the seasoned oil. (5 minutes)

03

Step

Bake in the preheated oven until the tomatoes soften and burst, and the feta is golden brown and beginning to melt, about 35 minutes. (35 minutes)

04

Step

While the feta and tomatoes are baking, bring a large pot of lightly salted water to a rolling boil. Add the farfalle pasta and cook until al dente, about 12 minutes. Drain the pasta thoroughly, reserving about 1/2 cup of pasta water. (15 minutes)

05

Step

Remove the casserole dish from the oven and gently stir in the heavy cream and chopped fresh basil. Add the drained pasta to the dish and toss to coat, using a splash of the reserved pasta water if needed to create a creamy, emulsified sauce. Ensure the feta is well incorporated and evenly distributed. (5 minutes)

06

Step

Serve immediately, garnished with extra fresh basil and a crack of black pepper, if desired.

For an extra depth of flavor, consider roasting a bulb of garlic alongside the tomatoes and feta. Once cooled, mash the roasted garlic and incorporate it into the sauce.
A pinch of red pepper flakes can add a pleasant kick to the dish.
Experiment with different types of pasta. Penne, rigatoni, or even a short grain pasta like orecchiette would work well.
Serve with a side of crusty bread to soak up every last drop of the delicious sauce.
