Arrange spinach over the bottom of a 9-inch square baking dish. Pour about 1 1/2 cups sauce over the spinach, then arrange chicken breasts over top. Cover with remaining sauce and sprinkle with mozzarella cheese. (Assembly time: 5 minutes)

Return to the oven and bake until bubbly and lightly browned, 20 to 25 minutes. (Bake time: 20-25 minutes)

For a richer flavor, consider using a blend of Parmesan and Pecorino Romano cheese.
Freshly grated Parmesan cheese will melt more smoothly than pre-shredded.
Ensure the spinach is thoroughly drained to prevent a watery casserole.
Feel free to substitute other herbs based on your preference, such as thyme or rosemary.
If you want a deeper flavor, try browning the butter before adding the parmesan.
