For a smoother falafel, you can peel the chickpeas after soaking. This is optional, but it will result in a more refined texture. If your falafel mixture is too wet, add a little more flour, a tablespoon at a time, until it holds together well. Do not over-process the mixture, as this can result in a gummy texture. The mixture should be finely ground but still have some texture. For a spicier falafel, add more cayenne pepper or a pinch of red pepper flakes. Serve your homemade falafel in warm pita bread with your favorite toppings, such as tahini sauce, tzatziki sauce, hummus, chopped vegetables, and pickles.
