Follow The Directions

01

Step

In a large soup pot, combine the chicken broth, salt, and pepper. Bring to a rolling boil over high heat. (2 minutes)

02

Step

Add the chopped carrots, fennel, and orzo. Return to a boil, then reduce the heat to low, cover partially, and simmer until the orzo and vegetables are tender. (8-10 minutes)

03

Step

Stir in the chopped cooked chicken and cook until heated through. (5 minutes)

04

Step

Remove from heat and stir in the fresh lemon juice and dill.

05

Step

Garnish with additional fresh dill and fennel fronds before serving.

For a richer flavor, try using homemade chicken broth or adding a Parmesan rind to the soup while it simmers.
Feel free to add other vegetables to the soup, such as celery, zucchini, or spinach.
If you don't have fresh dill, you can substitute 1 tablespoon of dried dill.
The soup can be stored in the refrigerator for up to 3 days. Reheat gently before serving.
