Preheat oven to 450 degrees F (230 degrees C). Grease a 9x13-inch baking pan. (5 minutes)

Heat a large skillet over medium heat. Add diced chicken and cook, stirring occasionally, until browned on all sides and cooked through. Transfer chicken to a plate and set aside. (6 minutes)

Add vegetable oil to the now-empty skillet. Add diced tomato, bell pepper strips, and onion strips; cook and stir until softened, about 5 to 7 minutes. Return the cooked chicken to the skillet. Pour in water and stir in both packets of fajita seasoning. Mix well to combine. (10 minutes)

Line the bottom of the prepared baking pan with half of the tortilla wedges (about 5 tortillas' worth). Spread the rinsed and drained pinto beans evenly over the tortillas. Then, spread half of the chicken mixture over the beans. Sprinkle with half of the shredded Cheddar cheese. Layer the remaining tortilla wedges over the cheese. Spread the rinsed and drained black beans evenly over the tortillas, followed by the remaining chicken mixture. (15 minutes)

Cover the baking pan tightly with aluminum foil. Bake in the preheated oven until the tortillas are lightly browned and the chicken juices run clear, 25 to 30 minutes. Remove foil for the last 5 minutes to allow cheese to brown. Remove from oven, let rest for 5 minutes. Garnish with chopped green onions and fresh cilantro before serving. (35 minutes)

For extra flavor, marinate the diced chicken in a mixture of lime juice, olive oil, and a little fajita seasoning for at least 30 minutes before cooking.
Feel free to substitute your favorite type of cheese, such as Monterey Jack, Pepper Jack, or a Mexican cheese blend.
Add a dollop of sour cream or guacamole on top for an extra touch of richness.
This dish can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Just add a few extra minutes to the baking time.
Adjust the amount of fajita seasoning to your liking. If you prefer a milder flavor, use less seasoning.
