For a smoother salsa, pulse the ingredients a few times in a food processor, but be careful not to over-process. If you prefer a milder flavor, remove the seeds from the chipotle peppers before mincing. Fresh peaches can be used when in season. Peel and dice them before adding to the salsa. This salsa is best served fresh. It can be stored in an airtight container in the refrigerator for up to 2 days, but the cilantro may wilt slightly.
