For best results, use very ripe bananas. The riper the banana, the sweeter and more flavorful the muffins will be. Don't overmix the batter! Overmixing develops the gluten in the flour, which can result in tough muffins. Mix until just combined. Feel free to substitute other nuts, such as pecans or almonds, for the walnuts. Add a sprinkle of oats on top of the muffins before baking for a nice textural contrast.
