Follow The Directions

01

Step
15 mins

Prepare Vanilla Sugar: Spread the sugar evenly in a shallow dish. Drizzle vanilla extract, a few drops at a time, across the sugar to create small clumps of vanilla-infused sugar. Allow these clumps to air dry and harden slightly. (Approximately 20 minutes)

02

Step
20 mins

Pit the Cherries: Carefully pit each cherry from the bottom using a cherry pitter or a small, curved tool, ensuring the stem remains attached. (Approximately 15 minutes)

03

Step
10 mins

Stuff the Cherries: Once the sugar lumps have hardened, gently insert them into the cavities of the pitted cherries. (Approximately 10 minutes)

04

Step
5 mins

Melt the Chocolate: Place the chopped chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. (Approximately 2-3 minutes)

05

Step
15 mins

Dip and Set: Hold each cherry by its stem and dip it into the melted chocolate, leaving a small portion of the top uncovered for an elegant touch. Place the dipped cherries on a sheet of waxed paper to set. (Approximately 15 minutes)

06

Step
8 hrs

Chill and Infuse: Transfer the cherries to the refrigerator and chill for at least 8 hours, or preferably overnight, to allow the vanilla sugar to dissolve and infuse its flavor into the cherries. (8 hours - Overnight)

For an extra layer of flavor, consider adding a pinch of sea salt to the melted chocolate.
Use the highest quality chocolate you can find for the best flavor experience.
If you don’t have time to make vanilla sugar, you can skip this step. The cherries will still be delicious.

I couldn't find Bing cherries, so I used Rainier cherries. Still delicious, but a bit sweeter.

Adding a sprinkle of sea salt on top of the chocolate before it sets is a game changer!

The chocolate was too thick. Maybe add a teaspoon of coconut oil when melting?

Freezing them is a genius idea! They taste like little chocolate-covered cherry bonbons.

I used a flavored sea salt instead of vanilla sugar – amazing!

  • Jerad Kunde

Make sure your cherries are completely dry before dipping; otherwise, the chocolate seizes.
