Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Reduce heat to medium-low and continue cooking until golden brown and caramelized, 10 to 15 minutes. (20 minutes)

In a large bowl, combine the cooked noodles, caramelized onions, beaten eggs, remaining vegetable oil, salt, and pepper. Mix thoroughly. (5 minutes)

Pour the noodle mixture into an 8-inch square baking pan. (2 minutes)

Bake in the preheated oven until golden brown and set, about 35 minutes. Let cool slightly before serving. (40 minutes)

For a richer flavor, try using olive oil instead of vegetable oil.
Add a sprinkle of breadcrumbs on top before baking for an extra crispy crust.
Feel free to experiment with additional seasonings, such as garlic powder or paprika.
Kugel can be made ahead of time and reheated; cover with foil when reheating to prevent burning.
