For a sweeter coleslaw, add a tablespoon of honey or maple syrup to the dressing. If you prefer a creamier coleslaw, replace 2 tablespoons of the olive oil with mayonnaise or Greek yogurt. Feel free to experiment with other vegetables, such as jicama, kohlrabi, or radishes. The coleslaw can be made a day ahead of time. The flavors will continue to develop in the refrigerator. Add some toasted pepitas or sunflower seeds for extra crunch.
