Simmer the Lentils: Cover the lentils with 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes, or until the lentils are tender but still hold their shape. Add more water if necessary to prevent them from drying out. (45 minutes)

Assemble and Serve: Once both the cotechino and lentils are cooked, remove the onion, garlic, bay leaf, and carrot from the lentils and discard. Transfer the cooked lentils to a serving dish. Drizzle with olive oil. (5 minutes)

For a richer flavor, consider using chicken or vegetable broth instead of water when cooking the lentils.
If you can't find fresh cotechino, precooked cotechino is a suitable substitute. Just adjust the simmering time accordingly.
