For a richer flavor, try using full-fat cottage cheese. If you don't have dill seed, fresh dill (about 2 tablespoons, finely chopped) can be substituted. Add it with the other wet ingredients. Make sure your yeast is fresh for optimal rising. Check the dough consistency after the first few minutes of kneading. If it seems too dry, add a tablespoon of water at a time until it forms a smooth, elastic ball. If it's too wet, add a tablespoon of flour at a time.
