Heat lard in a large, heavy skillet over medium-high heat. Fry steaks in hot lard until golden brown, 3 to 4 minutes per side. Drain on a paper towel-lined plate.

Pour off all but 2 tablespoons fat from the skillet. Sprinkle 2 tablespoons dredging flour into fat. Cook and stir over medium heat for 1 minute, scraping up any browned bits from the bottom of the skillet.

Gradually whisk in milk. Cook, whisking frequently, until gravy is thickened and bubbly, 3 to 4 minutes.

Stir in remaining 1/4 teaspoon salt and 1/2 teaspoon pepper; gravy should be quite peppery. Serve and enjoy!
For an extra crispy crust, chill the dredged steaks for 15 minutes before frying.
Feel free to adjust the amount of pepper in the gravy to your liking. A pinch of cayenne pepper can also add a nice kick.
If you don't have lard, vegetable oil or shortening works well as a substitute.
Serve with mashed potatoes or buttered noodles to round out this comforting meal.
