Follow The Directions
01
Step
Preheat oven to 425°F (220°C). Grease an 8-inch cast-iron skillet with shortening. (5 minutes)
02
Step
In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cream of tartar until well combined. (2 minutes)
03
Step
Add the cold butter and 1/4 cup shortening to the flour mixture. Using a pastry blender or your fingertips, cut the butter and shortening into the flour until the mixture resembles coarse crumbs. (5 minutes)
04
Step
Pour in the chilled buttermilk. Gently stir until just combined. Be careful not to overmix; a few streaks of flour are fine. (3 minutes)
05
Step
Turn the dough out onto a lightly floured surface. With floured hands, gently pat the dough to approximately 1 1/2-inch thickness. (3 minutes)
06
Step
Using a 2 1/2-inch biscuit cutter, cut out 6 to 8 biscuits. Transfer the biscuits to the prepared skillet, arranging them close together. (5 minutes)
07
Step
Bake until the biscuits are golden brown, about 25-30 minutes. Remove the biscuits from the oven and let them cool in the skillet for 5 minutes before serving. (30 minutes)
08
Step
While the biscuits are baking, prepare the ham. Add bacon grease to a cast-iron skillet over medium heat. (2 minutes)
09
Step
Add the ham slices and fry until the edges are browned and slightly crisp, about 2-3 minutes per side. (6 minutes)
10
Step
Remove the ham from the skillet and place on a paper towel–lined plate to drain excess grease. Cut each slice in half. (2 minutes)
11
Step
To serve, split each biscuit in half horizontally, spread with softened butter, and sandwich with a piece of ham. Serve warm and enjoy! (2 minutes)
For extra flaky biscuits, ensure all ingredients (especially butter and buttermilk) are very cold.
Don't overmix the dough! Overmixing develops gluten, resulting in tougher biscuits.
If you don't have a biscuit cutter, you can use a sharp knife to cut the dough into squares.
For a sweeter biscuit, increase the sugar to 2 tablespoons.
Feel free to experiment with different types of ham, such as prosciutto or Black Forest ham.
Serve with a side of honey or jam for a delightful sweet-and-savory combination.
