Bring a large pot of water to a rolling boil over high heat. Add macaroni and 4 1/2 teaspoons of salt. Cook pasta until just barely al dente, about 5 minutes. Drain immediately and rinse with cold water to halt the cooking process. (5 minutes)

Generously spray the inside of a slow cooker with cooking spray. Add the drained pasta to the slow cooker, then pour in the whole milk and evaporated milk. Distribute the butter and cream cheese pieces evenly over the pasta. Season with pepper. In a separate small bowl, whisk together the egg and egg yolk until fully combined. Stir the egg mixture into the pasta. Reserve 3/4 cup of the shredded Cheddar cheese for topping. Incorporate the remaining cheese into the pasta mixture. Cover the slow cooker and cook on Low until the macaroni and cheese is bubbly and lightly browned around the edges, approximately 1 1/2 hours. (5 minutes)

Sprinkle the reserved shredded cheese evenly over the top of the macaroni and cheese. Cover again and continue cooking until the cheese is completely melted and gloriously gooey, about 15 minutes more. Serve immediately for the ultimate creamy experience. (15 minutes)

For an even richer flavor, consider using a combination of sharp and medium Cheddar cheese.
Don't overcook the pasta in the first step – it will continue to cook in the slow cooker.
If you prefer a crispier top, broil the macaroni and cheese for a minute or two after the final cooking step, keeping a close eye to prevent burning.
The crockpot can be turned to Warm or Off until ready to serve.
