For a vegetarian option, omit the ham bone and add a teaspoon of smoked paprika for a smoky flavor. If you don't have a ham bone, you can use 1-2 cups of diced ham instead. Add it along with the celery in step 3. For a smoother soup, use an immersion blender to partially blend the soup after removing the ham bone.
