If you prefer a tangier dressing, reduce the sugar by a teaspoon or two. If you don't have xanthan gum, you can omit it, but the dressing might not be as thick. Alternatively, you can use a cornstarch slurry (1 teaspoon cornstarch mixed with 2 teaspoons cold water), added to the blender during the final blending stage.
