In a large Dutch oven or heavy-bottomed pot, heat the canola oil over medium-low heat. Add the chopped onion and minced garlic and cook, stirring occasionally, until softened and translucent, about 5 minutes.

Add the crushed tomatoes to the pot, using a potato masher to break down any larger pieces. Stir in the cubed bread, chopped fresh basil, and brown sugar. Bring the mixture to a simmer and cook until the bread is completely saturated and begins to break down, about 10 minutes.

Carefully transfer the tomato mixture to a blender, filling it no more than halfway. Add the butter. Secure the lid tightly and pulse a few times to start, then blend until completely smooth. Repeat in batches until all the soup is pureed.

Return the pureed soup to the Dutch oven. Stir in the chicken broth. Heat over medium heat until warmed through, about 5 minutes. Season generously with salt and freshly ground black pepper to taste. Serve hot.

For an extra layer of flavor, try roasting the tomatoes before adding them to the soup. Toss them with olive oil, salt, and pepper and roast at 400°F (200°C) for 30 minutes.
A touch of balsamic vinegar added at the end brightens the flavors beautifully.
Garnish with a swirl of olive oil, a dollop of mascarpone cheese, or a sprinkle of fresh basil before serving.
