In a cold, nonstick skillet, arrange the bacon slices. Cook over medium heat until crispy and golden brown, about 8-10 minutes. Remove the bacon and set aside on a paper towel-lined plate, reserving the rendered bacon fat in the pan.

Add the cubed potatoes to the skillet with the bacon fat. Season with salt, pepper, and cayenne pepper (if using). Cook over medium heat, tossing occasionally, until the potatoes are browned, crispy, and tender, about 10-12 minutes. Add the sliced onion and bell pepper and cook until softened, about 3-5 minutes. Transfer the mixture to a strainer set over a bowl to drain any excess fat.

To assemble one burrito, place 2 strips of cooked bacon back into the skillet. Turn the heat to medium and spread half of the potato mixture evenly around the bacon. Sprinkle with half of the grated Cheddar cheese, ensuring it covers the potato mixture. Pour 2 beaten eggs over the cheese and potatoes.

Tilt the pan to ensure the egg is evenly distributed. Place a warmed tortilla over the top of the egg mixture and gently press it down with a spatula. Cook until the eggs are mostly set but still slightly moist, about 1-2 minutes. Carefully flip the entire burrito using a large spatula so that the tortilla is now on the bottom.

Cook until the tortilla is golden brown and crispy, about 2-3 minutes. Remove from the heat and transfer the crispy rolled creation to a plate. Garnish with hot sauce, diced avocado, sour cream, and fresh cilantro. Repeat the process to cook the remaining burrito.

For extra flavor, try adding a pinch of smoked paprika to the potatoes while cooking.
Feel free to customize the fillings to your liking. Consider adding cooked chorizo, black beans, or sautéed mushrooms.
Warming the tortillas before assembly will make them more pliable and easier to roll.
If you don't have a nonstick skillet, use a well-seasoned cast-iron skillet or add a tablespoon of oil to prevent sticking.
