Follow The Directions

01

Step
5 mins

Heat olive oil in a large pot over medium heat. Add onion and bay leaf; cook and stir until onion is translucent, about 5 minutes.

02

Step
2 mins

Add cumin, curry powder, turmeric, and coriander; cook, stirring frequently, until fragrant, 1 to 2 minutes.

03

Step
0 mins

Stir potatoes, chicken broth, water, canned tomatoes, and seasoning into the pot; bring to a boil.

04

Step
15 mins

Reduce heat and simmer until potatoes are mostly cooked through, about 15 minutes.

05

Step
10 mins

Add spinach; stir well to combine. Mash some of potatoes to thicken soup.

06

Step

Continue cooking until potatoes are soft, about 10 minutes more.

For a creamier soup, use an immersion blender to puree a portion of the soup after the potatoes are cooked.
If you don't have chicken broth, vegetable broth works just as well.
Fresh spinach can be substituted for frozen; simply add it towards the end of the cooking time until wilted.

I added a can of coconut milk for extra creaminess and it was amazing!

A great way to use up leftover potatoes. I also threw in some chopped carrots for added sweetness.
