In a medium saucepan, combine the brown rice syrup and coconut oil. Heat over medium heat, stirring constantly, until the coconut oil is melted and the mixture begins to gently boil (approximately 3-4 minutes). Remove from heat.

Add the natural peanut butter and vanilla extract to the warm syrup mixture. Stir until completely smooth and well combined.

Incorporate the rolled oats, raisins, and unsweetened flaked coconut into the peanut butter mixture. Stir until all ingredients are evenly distributed. If the mixture appears too wet, add additional oats, a little at a time, until a good consistency is achieved.

Transfer the mixture to a bowl, cover, and refrigerate for at least 30 minutes to allow it to firm up.

Once chilled, roll the mixture into bite-sized balls.

Place the formed balls on a baking sheet lined with parchment paper and freeze for at least 1 hour, or until firm to the touch.

For a richer flavor, toast the oats lightly before adding them to the mixture.
Feel free to substitute other dried fruits, such as chopped dates or cranberries, for the raisins.
If you don’t have brown rice syrup, maple syrup can be used as a substitute, though it will slightly alter the flavor profile.
Store the Peanut Butter Balls in an airtight container in the refrigerator for up to a week, or in the freezer for longer storage.
