Hard-Boil the Eggs (20 minutes): Place eggs in a saucepan, cover with cold water (about 1 inch above the eggs), and bring to a boil over high heat. Once boiling, remove from heat, cover, and let stand for 15 minutes. Drain and rinse under cold water until cool enough to handle. Peel and finely chop the eggs.

Cook the Bacon (10 minutes): Cook bacon in a large skillet over medium-high heat until crisp. Drain on a paper towel-lined plate. Once cooled, crumble the bacon into small pieces.

Combine and Chill (5 minutes preparation, 30 minutes chilling): In a medium bowl, combine the chopped eggs, crumbled bacon, mayonnaise, mozzarella cheese, paprika, sugar, white wine vinegar, and mustard. Stir until well combined. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

Garnish and Serve (2 minutes): Transfer the dip to a serving bowl and sprinkle with additional paprika for garnish. Serve chilled with crackers, vegetables, or toasted bread.

For a spicier kick, add a pinch of cayenne pepper to the dip.
If you prefer a smoother dip, use an immersion blender or food processor to blend the ingredients until desired consistency is achieved.
The dip can be made up to 24 hours in advance. Store covered in the refrigerator.
Consider adding a dash of hot sauce for extra zest.
