Combine the chicken carcasses, water, carrots, celery, onion, spinach, and salt in a large stockpot. (5 minutes)

Bring the mixture to a boil over high heat, then reduce the heat to low and simmer gently for 25 minutes to extract maximum flavor. (30 minutes)

Carefully strain the broth through a fine-mesh sieve lined with cheesecloth (optional) to remove all solids. Discard the solids. (5 minutes)

For an even richer flavor, roast the chicken carcasses in a 400°F oven for 20 minutes before adding them to the pot.
Feel free to add other aromatics like garlic cloves, bay leaves, or peppercorns to customize the flavor of your broth.
The broth can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
