Reserve one jalapeño pepper. Carefully remove the stems from the remaining jalapeños, halve them lengthwise, and scrape out the seeds. (5 minutes)

Place the seeded jalapeños in a large pot of boiling water and cook for approximately 15 minutes, or until they become tender. Reserve about 2 tablespoons of the boiling water before draining the jalapeños. (20 minutes)

Remove the stem from the reserved whole jalapeño. Combine all the jalapeños (cooked and raw) in a blender. Add the reserved 2 tablespoons of boiling water and the canola oil. Season generously with salt and freshly ground black pepper. (2 minutes)

Blend on high speed until the sauce is completely smooth and creamy. Taste and adjust seasonings as needed. (3 minutes)

Serve immediately while warm, or chill for later use. The flavors will meld and deepen as it sits.
For a milder sauce, remove more of the seeds and membranes from the jalapeños. For a hotter sauce, leave some seeds in or add a hotter pepper like a serrano.
The raw jalapeño adds a brightness and fresh flavor to the sauce. Adjust the amount to your preference.
Store the hot sauce in an airtight container in the refrigerator for up to 1 week. The color may fade slightly over time, but the flavor will remain.
