Bring the soup to a gentle simmer over medium heat. Reduce the heat to low, cover, and let simmer for at least 20 minutes to allow the flavors to meld together beautifully. For a richer flavor, simmer for up to 45 minutes. (20-45 minutes)

Before serving, taste and adjust seasonings as needed. Ladle the soup into bowls and garnish with fresh cilantro, a squeeze of lime, and a dollop of sour cream or Greek yogurt, if desired. (5 minutes)

For a vegetarian version, substitute the chicken broth with vegetable broth and omit the chicken.
To add more depth of flavor, consider sautéing a diced onion and bell pepper in olive oil before adding the other ingredients.
This soup is even better the next day! Store leftovers in an airtight container in the refrigerator for up to 3 days.
Adjust the amount of red pepper flakes to control the level of spiciness. Start with a smaller amount and add more to taste.
