For a spicier kick, add a pinch of cayenne pepper to the bean mixture. If you don't have Monterey Jack cheese, you can substitute with Pepper Jack or another mild white cheese. To prevent the tomatoes from making the dip soggy, be sure to seed them before chopping. Feel free to get creative with the toppings! Black olives, jalapenos, or cilantro would also be delicious additions. This dip can be made up to 24 hours in advance. Just be sure to keep it refrigerated until serving.
