Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray. (5 minutes)

In a large skillet coated with cooking spray, sauté the chopped onion and minced garlic over medium heat until softened, about 2 minutes. Stir in the shredded chicken, 1/4 cup of salsa, cubed cream cheese, chopped cilantro, and cumin. Cook, stirring occasionally, until the cream cheese is melted and the mixture is heated through, approximately 5 minutes. Stir in 1/2 cup of the shredded cheese until well combined. (10 minutes)

Spoon about 1/3 cup of the chicken mixture down the center of each flour tortilla. Roll up the tortillas and place them, seam-side down, in the prepared baking dish. Top evenly with the remaining salsa and shredded cheese. (15 minutes)

Bake in the preheated oven until the enchiladas are heated through and the cheese is melted and bubbly, about 15 to 20 minutes. (20 minutes)

For an extra layer of flavor, consider adding a can of drained and rinsed black beans or corn to the chicken mixture.
If you prefer a spicier kick, use a hot salsa or add a pinch of cayenne pepper to the chicken filling.
To prevent the tortillas from tearing, warm them slightly in a dry skillet or microwave before filling.
