Add the hot sausage and turkey to the skillet and cook until browned, breaking the meat into crumbles with a spoon, approximately 10 to 15 minutes. Drain excess grease.

Transfer the meat mixture to a large slow cooker. Stir in the crushed tomatoes, Italian-style diced tomatoes, beer, garlic powder, kosher salt, black pepper, cumin, chili powder, paprika, and brown sugar until well combined.

Tie the cinnamon sticks and cloves in a cheesecloth and add the bundle to the slow cooker. Set the cooker to Low and cook for 6 to 8 hours.

For a richer flavor, prepare the chili a day in advance and refrigerate overnight. The flavors will meld together beautifully.

Adjust the amount of chipotle peppers to control the spiciness. Start with less and add more to taste.
