Preheat oven to 350 degrees F (175 degrees C). (5 minutes)

Place shredded cabbage in a large pot and cover with lightly salted water. Bring to a boil over high heat. Once boiling, reduce heat to medium-low, cover, and simmer until cabbage is tender-crisp, about 5-7 minutes. Drain well and allow to steam dry for a minute or two in the colander. (10 minutes)

While cabbage is cooking, melt butter in a large skillet over medium heat. Add diced onion and cook until softened and golden, about 5 minutes. Reduce heat to low. Add cheese cubes and stir until melted and smooth. (7 minutes)

Stir in the condensed cream of mushroom soup, cooked cabbage, breadcrumbs, salt, and pepper to taste. Mix well to combine. (3 minutes)

Transfer the cabbage mixture to a 2-quart casserole dish. (2 minutes)

Bake in the preheated oven until the cheese is bubbly and the breadcrumbs are golden brown, approximately 20-30 minutes. Let cool slightly before serving. (30 minutes)

For a richer flavor, use Gruyere or sharp cheddar cheese instead of processed cheese.
Add a sprinkle of paprika to the breadcrumbs for extra color and flavor.
Fresh herbs like thyme or parsley can be added to the casserole for a more sophisticated flavor profile.
If you don't have panko breadcrumbs, regular breadcrumbs will also work.
