Step

In a skillet, arrange the chicken breasts and drizzle with lemon juice and half of the chopped rosemary. Pour in the chicken broth. (5 minutes)

Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 25 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. (25 minutes)

Remove the chicken from the skillet and allow it to cool slightly. Once cooled, dice the chicken into bite-sized pieces. (10 minutes)

In a large bowl, combine the diced chicken, lemon zest, remaining rosemary, chopped walnuts, chopped celery, crumbled blue cheese, mayonnaise, brown mustard, salt, pepper, and garlic powder. Gently toss until all ingredients are well combined. (5 minutes)

Cover the bowl and chill in the refrigerator for at least 1 hour to allow the flavors to meld together. (60 minutes)

For an extra layer of flavor, toast the walnuts lightly in a dry skillet before chopping.
Adjust the amount of blue cheese to your preference. Gorgonzola or another creamy blue cheese can be substituted.
If you prefer a lighter dressing, substitute half of the mayonnaise with plain Greek yogurt.
This salad is best served cold. It can be made a day ahead and stored in the refrigerator.
