Transfer the custard to a saucepan. Cook over medium heat, stirring frequently, until the custard thickens enough to coat the back of a metal spoon (about 5 minutes). Pour the custard into a bowl, cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for at least 2 hours, or until completely chilled.

Assemble the Trifle: In a separate bowl, whip the heavy cream with the remaining 2 tablespoons of sugar until stiff peaks form. Set aside. Line the bottom and sides of a trifle bowl with half of the pound cake slices. Drizzle the cake with half of the sherry. Pour 1/3 of the chilled custard over the cake layer, smoothing the top. Repeat the layers: pound cake, sherry, and custard, twice more. Top the trifle with the whipped cream, creating a decorative swirl or pattern.

Chill and Serve: Cover the trifle with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld together beautifully. Serve chilled and enjoy the delightful combination of textures and tastes.

For an extra layer of flavor, consider adding a thin layer of fruit preserves (such as raspberry or apricot) between the cake and custard layers.
If you don't have cream sherry, you can substitute with another sweet sherry or even a fruit juice like apple or white grape.
To prevent the pound cake from becoming soggy, you can lightly toast the slices before assembling the trifle.
